This past Friday night was sweltering. Unfortunately my house doesn’t have air-conditioning. I decided that a picnic dinner at the beach was in order to get out of the heat.
I threw together a salad consisting of: watermelon cut into bite size chunks, fresh peppery arugula, and crumbled feta with a Greek vinaigrette dressing.
For my main dish, I boiled some penne pasta to al dente and then tossed crumbled feta cheese with a cup of basil pesto onto my penne. I added some leftover cut up chicken to the pasta, threw some toasted pine nuts on top and voila! Dinner with minimal effort.
Since it was Friday night, a bottle of wine to enjoy on our picnic was a must! I chose an Argentinian white wine called, New Age. You pour it over ice and squeeze a fresh lime in it. It is super refreshing. I have served this particular wine to many of my girlfriends and now they are hooked.
It is always fun to mix things up and to have dinner al fresco, watching the beautiful sun setting at the beach. We had about the nicest “table with a view”, a lovely meal with a bottle of wine. Simple, and all without the cost of dining at a fancy restaurant. So that is how you have a great dinner with a million dollar view!
